Well other than getting used to the track you are racing on, all I can really say is you need A TON of luck. I tried beating the first one for hours and eventually pulled it off...I got second place without dying, then the last two lives were spent trying to get the rest of the points needed for first. One thing I noticed that might help is that the red missile markers move sometimes. It might be helpful to drive slowly (not that slow, just not top speed) until the missiles are locked on, then pull on the accelerator and try to zip by before the missiles correct themselves and spread out more...
