Honestly, games on PS3 and Xbox 360 are practically identical. I rented it on PS3 because it's going to have exclusive DLC for it sometime. But besides that, i see no reason to get it on PS3 rather than Xbox 360.
I don't know about loading times, but the graphics are the same on each console. Although, may i say that loading times are rediculous for PS3. (It might be the same on Xbox 360, but i don't know)

Regardless of what platform you get it on, you'll have a blast.
That said, the PS3 version runs at a slightly lower resolution than the 360 version, and folks have noticed some missing pieces of the environment on PS3.
For example:
360 - http://ded.zenblue.net/360_RDR_arrows.jpg (arrow point to stuff missing in from the PS3 version)
PS3 - http://pds20.egloos.com/pds/201005/19/09/a0037809_4bf356bdbd11c.jpg
All this aside, the game itself is great. If you have a choice of platform, I'd recommend the 360 version, but if you're a PS3-only user, none of these issues will ruin the experience.

I got it for Xbox 360 because I thought the online play would be better (partying up with friends and such).

PS3. It has exclusive DLC that comes free with the game.

I wouldn't recommend getting it for the PS3 do to the reports of framerate issues, graphical glitches, and lowered resolution.

Get the 360 version.
I own the PS3 version. It has tons of technical problems and glitches. I thought it wouldn't be that bad, but it actually is.

I think the single-player campaign is about equal on both platforms. So it likely doesn't matter in that regard because both versions are good. So it basically just comes down to whether you'd rather get achievements or trophies, and if you plan on playing multiplayer (which is quite good), which system more of your friends play multiplayer games on, because ultimately you don't want to buy the opposite version, and thus be isolated from the people you generally play games with.
