The only games I can think of are Splinter Cell games or Rainbow six Vegas.

Alpha Protocol is a great game. You have to be stealthy, and have to think before you act.

The Splinter Cell series is stealth-based (especially Chaos Theory, playable on 360, for the Xbox), Assassin's Creed a little less so, all the Fallout and Elder Scrolls games also include stealth if you wish to use it. Arkham Asylum also is very stealth-oriented, if you like Batman.
