Just Dance reads your movement through the Wiimote, which is more or less a point in space.

Dance Central reads your whole body using the Kinect instead of one point in space, and corrects your dancing accordingly.

Long story short, you can easily cheat in Just Dance, not so much in Dance Central...consequently, you'll probably learn how to dance better with Dance Central.
