Like Call of Duty or Battlefield? I want to fly helicopters.
wondering if you can pilot helicopters or tanks or whatever.

Yes, you can pilot 5 different vehicles in multiplayer: Humvee, LAV, Tank, Scout Helicopter, and Assault Helicopter. You can also pilot airborne and ground ground drones remotely as well as call in airstrikes via UAV.

Only Battlefield has vehicles. Black Ops just sucks In general I think you would have more fun with Battlefield: Bad Company 2 if you like vehicle combat and completely destructible environments.

you can pilot a plane 2 or 3 times on campaign in black ops but online you need a 8 kill streak to get chopper gunner and 11 kill streak for a cobra that you control
