Mad Catz make custom controllers, but not out of real guitars... Not sure of anyone who makes them out of real guitars...

I actually have these and they are a bit harder to use than the plastic ones, but only because the buttons are a bit tougher and don't always seem to register so well. The weight and build of these is pretty solid though. They work on PS2 and PS3, but I'm not sure if they make one for the 360.
