How many Zombie maps are there for Call of Duty: Black Ops right off the disc?

There are two zombie maps on the disc and I heard you can enter a code on the terminal to unlock a third (not a code from hardened or prestige editions). Hardened and Prestige editions should have the same extra maps, if there were any.

Is there Enemy Intel in Call of Duty: Black Ops?

Yes, there are intel in Black Ops. I don't know how many there are but I do know that there's either two or three in every level until about mid game. The guide I was reading stopped at that point, and I haven't found any in later levels yet. There should be more complete guides in a few weeks to confirm how many and where they are.
